    Hi Bradley,
    I'm not entirely with you concerning recording everything well except drums. I would say everything you record with condenser mics is room dependent. But you say your room is treated, which I think is one of the most important parts when recording live instruments.

    Imagine you buy a desk first. What are you going to do with it? How will you get the single channels into your DAW?
    If you look for interfaces first, you can already start recording. Will 16 channels be enough (or 15 since you may need one channel for talk back)?
    What about the quality of the interface? You looked for a Focusrite Scarlett, which is the consumer line. Should you look for better converters, Focusrite Clarett or even Red Line?
    Will your interface have XLR inputs or will you have one with DB25 connectors?
    With a desk you would only need a line input interface, but you will want one with enough inputs for the whole desk. My guess is, and somebody please tell me if I'm wrong, that you will need at least the same amount of money for interface (including cables) as for the desk.
